The first step: Enrollment

Signing up is the first step to getting food safety training in Red Deer. Among our younger students, the most popular way to enroll is through the Red Deer First Aid website. We have a form on the website that can be filled out and submitted online. You can choose the program you want and fill in your personal details through that form. Forms are processed during business hours.

You may also enroll and send in your queries through e-mail and over the telephone. We still highly encourage students to sign in in person and to check out our training location during business hours.

The second step: Learning food safety in Red Deer First Aid

The topics covered by our food safety training program is focused on safe food handling, the entire process from preparing to food to serving (or storing!) it. Safety is the main thing we teach our students, because safely prepared and handled food decreases the risk of the consumer being infected by a foodborne illness. Unsafe food – especially if the food handler doesn’t practice proper infection control – is usually contaminated by pathogens and substances that can cause a variety of gastrointestinal (and even systemic) symptoms.

What exactly causes foodborne illness? Contaminants are one of two things: (1) pathogen or (2) chemicals (and similar substances). Pathogens are microoganisms which can cause disease, like the E.coli bacterium. Substances like pesticides can also end up on food that is not cleaned properly and result in symptoms of poisoning. Common symptoms: nausea, vomiting, stomach pain and cramps, diarrhea.

Parasites

A special case of foodborne illness is caused by the ingestion of parasites. Parasites do not live alone on food, they need other living organisms to survive. Small parasites such as Giardia and Cryptospordium can be found in untreated water, which when ingested can cause gastrointestinal symptoms.

The last step: Getting your certificate

The training program at Red Deer First Aid is a certification program. We give students food safety training credentials upon completion of the program and passing all the examinations. In Alberta, training credentials do not expire. On the other hand, food service workers are required to sign up for update classes every five years or sooner. Update classes are available at Red Deer First Aid through refresher courses. You may sign up for them earlier than five years if you feel like you need an update regarding food safety.
